Today chicken features in almost every cuisine. Its universal popularity is due to the fact that the flesh combines with an array of different ingredients. It is used in soups, salads, stir-fries, curries, roasts and braised dishes. Most parts of the bird is utilised. Cafrial is a method of preparation, usually used with chicken, in which the meat is marinated in a sauce of chillies, garlic and ginger and then dry-fried. This results in a light elegant spicy dish where there is a ray of sunshine in every mouthful.
Ingredients :
Grinding :
10 Red Chillies
5 pepper
very little Cinnamon
7 - 8 Red Ripe Tomatoes
1 Teaspoon Jeera
Turmeric Powder
5 Garlic Shells
1/2 teaspoon sesame seeds
Salt to taste
Shark Fish.
Preparation :
Heat oil in a pan, add sesame seeds, curry leaves and then the ground masala, fry the masala well and then add water ( masala remain from the grinder ) then let it boil for about 5 minutes and then add shark fish cubes, cook it for about 5 more minutes and then at the end add a little bit of vinegar and put the gas off
Garnish with fresh coriander leaves.
