This is also another popular white meat but has a more subtle taste. However adding herbs and spices makes no goan pork dish ordinary. Goan food varies from mild to very hot and spicy so there is a dish for everyone to indulge in. Like chicken, it blends happily with a wide range of ingredients, from vegetables to shellfish and is equally at home with salted and pickled foods. Most parts of the pig are used in cooking, the leg, shoulder, loin and belly pork is irresistible for sorpatel.
Ingredients :
1 kg pork (boneless)
3 carrots.
100 gms peas
100 gms french beans
100 gms potatoes,
1 inch ginger,
6 green chillies
8 pepper corns
6cloves
1 inch cinnamom
6 flakes of garlic
1 tsp cumin powder
1 tsp tumeric powder
1-2 onions
salt
vinegar
100 gms macaroni
1/2 tsp red chilli powder if you want it a bit pungent
Preparation :
Cut the pork into big pieces. Add salt and keep it for half an hour. Then wash it thoroughly to remove all greasy substance formed. Put three to four cups of water and put it in the presure cooker and cook it for one whistle. Allow the same to be cooled and then cut the meat into small pieces. The pieces can be 1/2 inch .Then fry the meat on the pan using no oil till the meat is brown. Chop onions finely. Chop two green chillies and ginger, garlic and fry all these using the pork fat. Put all these in the meat. grind chillies. pepper, cloves cinnamon, tumeric, red chilly powder in vinegar. Add the ground paste to the meat. Now put little oil in the vessel and season chop onions till brown. Add the meat and the ground paste to it. Now add green peas, chopped carrots (round ) french beans, cut potatoes, and allow the meat and the vegetable to be cooked. Then add macaroni and let the macaroni get cooked. Serve.
