Ingredients :
12 egg whites
500g sugar (ground sugar)
450g nuts (ground fine)
Use caju nuts or almonds
Preparation :
Beat egg whites until stiff. Add sugar and mix well. Add nuts and mix well.
Grease a Swiss roll tin, add just enough mixture and bake in a pre-heated oven at gas mark 3 for about 15minutes.
Bake the remaining mixture in the same way. Cut the baked tiers into halves.
Spread filling (beat equal quantities of ground sugar ad unsalted butter, approximately 125 g minutes each) on one tier, cover with the other and continue till the end.
Finally spread the cream on all 4 sides and the top as well. Decorate with sliced glace cherries.
