Ingredients :
1 kg undercut or loin
1tsp turmeric powder
1tsp chilli powder
1tsp peper corns
1/4 tsp cloves
1" stick of cinnamon
2 large red chilli whole (madras)
2 tbs ginger/garlic paste
1/2 cup water
2 tbs oil
salt to taste
Preparation :
In a shallow pan bring the meat to boil and let all of the water evaporate. Add chilli/turmeric powder and fry the meat in 2 tbs oil till nicely brown.
Now transfer the meat to pressure cooker; add salt and whole masala powders and water.Bring to full pressure and after the first whistle reduce the flame and pressure cook on low flame for about 20 mins.
When cooled remove the meat and water and keep in the freezer or chiller to cool.
Strain the liquid; slice the meat in thin slices and keep the whole mixture on simmer till the water has dried out.
You can now fry the required amount of slices and serve with potatoes and other boiled or steamed vegetables.
