Ingredients :
5 pieces ripe jackfruit (arils) deseeded
4 eggs
2 ½ cups flour
1 ¾ cups sugar
220 gms butter
1 ½ tsp baking powder
1 tsp lime juice
A pinch of salt
Preparation :
Sieve/ mix flour and baking powder.
Separate egg yolks and white and beat the egg whites till stiff.
In a mixing bowl, mix together butter and sugar. Add egg yolks, salt and lime juice.
To the above mixture add alternately flour and egg whites and mix using an electric hand mixer.
Chop jackfruit into fine pieces and add to the above batter. Mix well.
Preheat oven. Pour the batter into a large greased pan and bake at 180 degrees for 50 mins.
