Ingredients :
½ kg. Tongue (dressed)
¼ kg liver
15 kashmiri chillies
½ tsp. Cumminseeds
6 peppercorns
¼ tsp. Tumeric powder
5 cloves
1” cinnamon
2” ginger
8 flakes garlic
3 tbsps. Oil
2 onions (chopped fine)
1 cup tamarind juice
Preparation :
Parboil the tongue and liver each separately in a little salted water.
Cut the tongue and liver into small cubes. Grind the next 8 ingredients to a fine paste using either vinegar, or water, or vinegar and water mixed.
Heat 1 tablespoon oil and fry the cubed tongue for 2 minutes. Repeat the same with the liver. Brown the onions in the remaining oil using another pan.
Add the spice paste, stir-fry for a minute than add the fried tongue and liver. Pour the tamarind juice; add slat, vinegar and green chillies if necessary. Cook till the tongue is tender.
