Ingredients :
4 tbsps. Oil
1 onion (chopped)
1 tsp. ginger-garlic paste
1/2kg. Beef (minced)
2 tomatoes (chopped)
2 tbsps. Chopped coriander leaves salt and freshly ground pepper to taste
2 tbsp. lemon juice
1medium brinjal (peeled ad sliced)
2 large potatoes (peeled and sliced)
5 or 6 tbsps. Dry breadcrumbs
2 egg whites (beaten)
2 egg yolks (beaten)
½ cup milk
½ cup grated cheese
Preparation :
In a large pan, heat 1 tablespoon oil and fry the onions till tender. Mix the ginger-garlic paste.
Add beef mince and stir-fry till browned. Add the next 5 ingredients, cover the pan and cook till dry.
Apply salt to brinjal and potato slices. Heat the reaming oil and stir-fry the slices till well browned.
Take a greased over-proof dish, and sprinkle half of the breadcrumbs on the bottom and side of the dish.
Add the remaining crumbs and beaten eggs whites to the meat mixture. Mix well.
Layer binjal and potato slices and meat mixture in the lined dish, ending with brinjal slices on top.
Beat egg yolks, milk and cheese. Pour over the whole mixture. Bake at gas mark 4 for 30-45 minutes or until browned.
