Ingredients :
6 medium bittergourds
1 tbsp. salt
4 tbsps.oil
5 onions (chopped fine)
6 green chilies (chopped fine)
8 tbsps. Coconut (grated fine)
½ tsp. chili powder
½ tsp. turmeric powder
2 tomatoes (chopped fine)
½ tsp, ginger0garlic past
2 tbsps. Lemon juice
¼ tsp. sugar
Preparation :
Scrape the outer skin of the bitter gourds. Cut them into halves, discard pith and wash well. Slice the gourds into small bits.
Apply a little salt, crush with your fingers and drain out the water. Apply a little more salt and allow standing for an hour or more. Drain.
Brown the onion lightly in hot oil, add biter gourd pieces and seeds. Stir in the remaining ingredients, one by one and keep frying till vegetables are tender. A little water may be added if necessary.
Simmer till mixture is quite dry.
